    Food Friday: Lime Spaghetti

    One thing you never really imagine would be perfect in spaghetti is… lime!  But is this is far from the truth!  Another perfect recipe by @Toriwesszer and this one my friends is unbelievable! First of all, it’s SO SO SO easy!  I mean EAZZZZZYYYYY.  Second of all, it’s just as good cold as it is warm and third of all, it’s totally different and PERFECT for summer!

    The recipe is very loose and 'to taste' honestly - don't over-think it and it will be perfect.  The great thing is you can add to it until it’s just right for you!

    Ingredients

    Handful of spaghetti - enough for about 4 servings
    1/4 cup of EVOO
    1 big juicy lime or 2 smaller Limes
    1/2 -1 cup of diced FRESH Italian or curly parsley (grow some in your garden now!)
    2 cloves of chopped garlic
    1/4 cup of parmesan cheese
    Salt & pepper to taste

    This is what you do, literally boil the spaghetti - drain it and save about 1/4 cup of the pasta water.  Don’t rinse it, just throw it into a big bowl when it’s nice and hot.

    Toss in the EVOO, the parsley, the garlic, the salt and pepper.  Toss gently.  Add the pasta water with the parsley & toss again.  Finally, cut the lime in half and squeeze all the tangy juice, salt & pepper & toss!

    If you’re like me and love the lime flavour… you can even do a bit of lime zest - and as a variation try adding flame grilled shrimp or even lobster! YUMMM!!!!

    (PS… if you eat it next day cold, just squeeze a bit more lemon or lime juice on the cold pasta and she's ready to go again!)
