Food Friday: Shrimp Fried Rice

Happy Food Friday my friends! Today’s recipe is great as a last minute meal if you happen to have left over rice (or even if you don’t)!

Ingredients
2 cups leftover rice
Shrimp or chicken, diced
1 tablespoon butter
¼ cup onion, diced
½ cup peas
2 tablespoons soya sauce

Instructions

  1. Cook diced chicken or shrimp (or used left over chicken) in a pan.
  2. Add butter and onion
  3. Once translucent, add leftover pre-cooked rice, peas, and soya sauce and cook on medium.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh or dried parsley.

      Hmm my favourite last minute dinner, you mean other than one of your recipes?! ;)


      One of my favourites this winter is white bean chili! Inspired from this recipe: http://allrecipes.com/Recipe/cha-chas-white-chicken-chili/detail.aspx


      Ingredients:


      1 tablespoon vegetable oil
      1 onion, chopped
      1 tablespoon chopped garlic
      2 small, diced jalapeno peppers
      1 teaspoon dried oregano
      1 teaspoon cayenne pepper
      2 cups chicken broth
      2 large cans white kidney beans
      Optional: chopped cooked chicken breast and shredded cheese


      Directions:
      1. Heat oil over medium heat
      2. Cook onion until tender
      3. Mix in garlic, jalapeno, oregano and cayenne (can subsitute with chili powder if on hand)
      4. Continue to cook and stir until tender, about 3 minutes
      5. Add chicken broth, white beans (if from a can I usually strain and rinse first), and chopped chicken (optional)
      6. Simmer for 15 minutes, stirring occassionally
      7. Garnish with shredded cheese and serve


      Yum!
