10 Recipes to Indulge in This Summer


I’m so excited for summer to get here for a few reasons … the weather is the FREAKIN best here in the Okanagan during the summer months … our pool will be open and I can’t WAIT to see how much Leo loves it this year … and lastly, more picnics and BBQ’s are coming our way, which means it’s time to shift from hearty comfort foods to salads, sandwiches, NICE CREAM … and delish lemonades!!

We shared so many great summer recipes with you last year that I thought it would be great to round them all up together in one post that you can refer back to them when you’re looking for something to whip up during those warm summer nights!! So, without further adieu, let’s take a look at some of my faves!

1. Avocado Citrus Salad

There’s nothing more refreshing than juicy pink grapefruit, perfectly paired in this Mexican-inspired salad with creamy and healthy avocados and drizzled with a bright honey lime vinaigrette. It’s basically a spa on a plate: your bikini will thank you!

If I had to name one sandwich I miss the most it would have to be a BLT. Bacon … lettuce and tomato. This used to be one of my favourite lunchtime staples and ever since I made the transition to a more plant-based diet I’ve struggled to create the perfect vegan BLT. Well … guess what, ladies and gents?! I FRICKIN MADE IT!!!

When someone who isn’t vegan thinks about a vegan sub they automatically assume it is going to be boring and dry. Welp. That’s not the case here!

This is one of those recipes you can make ahead of time, pop in the fridge and toss it in the oven when you get home from a busy day … you’ll be counting down the hours until you can dig into it at home, trust me. LOL! It’s the ultimate vegan comfort food and a meal the WHOLE family will enjoy!!

This chia pudding tastes like dessert but it’s really a healthy breakfast option!! Sounds like a BIG mom win, doesn’t it?! ?

8. Coconut Lemonade

The beauty about this Coconut Lemonade recipe is that it tastes amazing as a Mocktail BUT if you’re planning on getting a little silly poolside you can add some vodka to it as well to shake things up a bit!!

9. Coconut Almond Milk Matcha Latte

This Coconut Almond Milk Matcha Latte is a great alternative to coffee!! I use WithinUs TruOrganic Matcha which helps to improve concentration and cognition … (ummm I need this in my life … LOL!),  it has many of the same benefits as coffee without some of the negative effects … aka the JITTERS. Plus it’s FILLED with vitamins and antioxidants!

10. My Daily Smoothie

Lately, I’ve been digging my delish green smoothie mainly because it doesn’t taste like your regular green smoothie, it tastes like you’re drinking a juicy tropical paradise and you can FEEL your body being nourished!! It’s also one of Leo’s FAVES!!
