With Christmas just under two weeks away I figured I better get down to business decorating our home and whipping up some Christmas baking!!! This morning I figured I would grab a big cup of coffee and hunker down and find myself some amazing vegan cookie inspiration and ohhhh my goodness … did I do JUST that!!! The trouble is, now I have to decide which one to make first!!
I absolutely LOVE a good sugar cookie and the Minimalist Baker took them to the next level by making them completely vegan and GORGEOUS!!! Plus, they only require one bowl … and take under 45 minutes to make!! Just look at the photo below … drool!!! …

Then I stumbled upon these Vegan Gingerbread cookies on the same site and we all know that Gingerbread is ALWAYS a Christmas staple!!! This Gingerbread batter looks so naughty but trust me, it’s certainly on the nice list as it’s actually LOADED with wholesome gluten-free grains like buckwheat, brown rice, and oat flour…. what?!!!! I’ll take it!!!

They’re not harder to make/any less delicious because they’re Vegan :).
I’ve never met a cookie I didn’t like but Yah I’ve found in my baking my family much prefers cookies with eggs and dairy:). Christmas baking without butter whaaaaaat?!?! Haha. I’m always interested to see what Jillian whips up either way.

I tried Nutcracker Cookies at home last sunday with my sister. They looks amazing. The taste of nuts in cookies is outstanding.
