Did you know that February is officially apple month?!! I’ve been all about apples lately and even shared the recipe for my Apple Gruyere Pastry on B.C. Tree Fruits’ “Taste Off 2014” competition! While experimenting with all sorts of apple recipes, I came up with this deeelish dish that combines some of my all time favourite ingredients!
It was WAY easier than it looks
Ingredients & Directions
Basically I bought a tenderloin, rolled it out and with a meat mallet – tenderized it until flat. I drizzled a little olive oil, salt and pepper and diced bc apples with fresh thyme & goat cheese!
I rolled it up and secured it with butchers twine. Season with salt and pepper and put in oven at about 375.
While tenderloin begins to cook, in a sauce pan, mix a 1/2 cup of homemade apple sauce, 1/4 cup of apple cider, 2 table spoons of honey, thyme & 2 table spoons of butter and bring to a low boil and reduce slightly (until it starts to thicken a bit)
Pour this over the tenderloin and finish cooking the tenderloin until meat thermometer reads 165.
Remove, let rest for a few minutes (so that all of the juices stay in the meat), slice and enjoy!!!
