With St. Patrick’s Day just around the corner I thought I would repost one of my favourite party recipes for it….Irish Cupcakes!!! As most you probably know, I’m not the best baker, so thanks to my cousin Tori for whipping up this amazing recipe for me!!!! If any of you know me…you know that I love sweets…and these cupcakes make my taste buds burst. Happy early St. Patrick’s Day my loves and HAPPY celebrating!!!
Ingredients:
Cupcakes:
1/2 cup brewed coffee
3/4 cup Guinness Extra Stout
1/2 cup unsalted butter, cut into 1-inch pieces
1 1/4 cups sugar
1/2 cup cocoa
1 cup all-purpose flour
1/2 teaspoon baking soda
Pinch of salt
2 large eggs
1 teaspoon vanilla
Icing:
1/2 cup softened butter
2 ½ cups icing sugar
3 Tbsp Baileys
1 Tbsp Whiskey (optional)
Directions:
Cupcakes: Mix coffee, Guinness, butter, and cocoa powder in a heavy saucepan and heat over medium heat, whisking, until butter is melted. Remove from heat, and add sugar and whisk until dissolved. Transfer mixture to a large bowl and set aside to cool.
In a separate bowl mix the flour, baking soda, and salt and whisk to combine; set aside. Whisk together eggs and vanilla in a small bowl, then whisk into cooled chocolate mixture until combined well. Add flour mixture and whisk until just combined. Fill each cupcake liner 2/3 full. Bake for about 30 minutes. Cool cupcakes completely before frosting.
Icing: In a medium bowl, cream the butter on med-high speed of a hand-mixer until light and fluffy. Add the icing sugar and Baileys and continue to mix until well incorporated. Add more icing sugar or Baileys as needed to get your desired consistency.

These look yummy! The picture looks like the tops are covered in a chocolate frosting layer before the Baileys buttercream. Is it something to add or are my eyes deceiving me? Thanks! 🙂
Baking temperature and time?

I baked them at 350 for 25-30 minutes
Ok so I needed a boozy cupcake and I looked online everywhere!! I had to come back to these because they were such a hit for saint patty’s day! Maybe a vegan/coconut sugar option in the works???? 🙂 these will be amazing for celebrating my husbands cousin’s 30th !!! Thank you Jill for these 🍻
