My Hearty Green Soup Recipe to Kickstart Your Wellness Journey!


It’s that time of year again… soup season!! Justin’s mom, Melissa makes the most delicious cream carrot soup… thank goodness for mother-in-laws, right?! Melissa’s soup inspired me to create my own healthy, hearty green soup to enjoy!

So, after trying Melissa’s soup, I put on my Romper and decided to get a little creative in the kitchen. That creative cooking time led to making the most DELICIOUS creamy, hearty green soup.  Seriously, I cannot recommend it ENOUGH!! Sixty-three percent of you on my Instagram Stories said that my hearty green soup recipe sounded good, so I decided it was only fair to share the recipe with you here on the blog. (Sorry if you’re in the 37% who thought it sounded disgusting, LOL. I mean, in all fairness, I started to doubt this recipe halfway through making it… but I PROMISE it turned out amazing!!)

The hearty green soup recipe took me only 45 minutes, beginning to end, and it honestly tastes like something you would order at a fancy, upscale restaurant… Yes, I’m wildly impressed with myself about how this turned out. As any cooking experimenter will know, you win some and you lose some with experimental kitchen recipes. But, this one I can assure you was A SUCCESS!!!!

And now, without further ado, let’s jump right into my hearty green soup recipe!

My Hearty Green Soup Recipe

Ingredients

  • 1 1 leek

  • 1 tbsp 1 olive oil

  • 1 1 onion

  • 2 2 garlic cloves

  • splash white wine

  • 3 3 celery sticks

  • 1 1 head of broccoli

  • small potato, cubbed

  • 3 cups 3 kale

  • 1/2 cup 1/2 peas

  • 4 cups 4 vegetable stock

  • parsley

  • ½ cup ½ nutritional yeast

  • avocado

  • pepper (optional)

  • Herbamare (optional)

  • croutons (optional)

Directions

  • Place a pot on the stove over medium heat. Add the olive oil.
  • Finely chop the leeks, onion and garlic cloves and add to the pot. Stir.
  • Add a splash of white wine.
  • Chop the celery sticks and broccoli and add to the pot. Reduce the heat.
  • Peel and cube the potato, and add to the pot.
  • Add the kale and peas to the pot and stir the vegetables together.
  • Pour in the vegetable stock.
  • Add parsley to taste.
  • Mix over the heated element for 10 minutes. Remove from the heat and let cool for a couple of minutes.
  • Pour the soup mixture into your blender. Blend until smooth.
  • Add the nutritional yeast, avocado and pepper and Herbamare (the secret ingredient!) to taste.
  • Pour into serving bowls and garnish with croutons!

And, there you have it: Jilly’s Hearty Green Soup!! This soup is packed with nutritious vegetables and is the perfect dish to serve this time of year.
