Hi again! I’m so happy to be back to share another recipe with you all!
While in high school, I had the opportunity to travel to Guadalajara, Mexico, on a school exchange program. This allowed me to indulge in my two favourite things: travel and food. An added bonus was that Mexico is the land of one of my favourite foods: tacos!
The trip was one of the best experiences of my life. My homestay family quickly adopted me as one of their own. Whenever my homestay mom asked me what I wanted for dinner, I would, of course, respond, “tacos!”. We would then venture out to sample the wares of the local vendors. The sights, smell, and flavours were wonderful.
Since that first trip, my “brother” and I have visited each other many times (he even attended my wedding!). Each time I returned to Mexico, he and I would wander the markets in search of spices and food. Torta ahogada and especially tacos al pastor became my new favourites. The simplicity, the spices, and the sweetness of the tacos delighted me. I became obsessed with recreating these flavours myself when I returned home.
I’m sharing with you my take on tacos al pastor. It contains ingredients that you can easily find in your local grocery store. The marinade is versatile enough to be used on pork, beef, chicken, fish, tofu, or vegetables.
