The Perfect End of Summer Recipe: Peach Jalapeño Popsicles!


Happy Fri-yay! What better way to enter weekend mode (especially in the Summer) than with a refreshing new treat to test out? I’m talking about a sweet and spicy peach jalapeño popsicle recipe… yup you heard that right! And if you’re really looking to SPICE things up why not add in a shot or two of tequila while you’re at it 😉! Today, I am so excited to welcome Tina from Simply Tina to the blog to share all of the details on this perfect end of Summer treat!

One of the things I really love creating, especially in the warmer months where I live (hey hey Ontario, Canada!), is popsicles. The possibilities are TRULY endless when it comes to recipes for them. I think it’s safe to say there are hundreds of ways you can make them. I thought I would spice things up, literally and figuratively, and try adding jalapeño into one of my recipes. That’s how these peach jalapeño popsicles were born.

Let’s also give a shoutout to peaches because, I mean, peaches! In-season peaches (July-September in Ontario) are the most delicious. They are so juicy and full of flavour. I just love the whole process of picking my favourite ones from the farmers market, bringing them home, cutting them up and enjoying them on a beautiful summer day. Pure magic. 

So, grab your favourite popsicle moulds, and let’s get started!

Sweet and Spicy: Jalapeños Peach Popsicle Recipe!

Ingredients

  • ½ cup monk fruit sweetener (see notes)

  • ½ cup filtered water

  • 2 small jalapeños, seeded, sliced

  • Juice of 2 limes

  • Pinch of sea salt

  • 5 slightly ripened peaches, roughly sliced + 1 thinly sliced peach

Directions

  • In a small saucepan on low heat, add the monk fruit sweetener and filtered water. Stir until the sweetener is dissolved, about 2 minutes.
  • Add the sliced jalapeños and lime juice. Stir to combine. Let the mixture simmer for about 5-10 minutes so that the jalapeños get infused into the liquid. The longer you simmer, the spicier it will be. We’re making a type of a simple syrup concoction!
  • Remove from the heat and also remove the jalapeños (use a sieve so that the seeds are also removed). Let the mixture cool for at least 15 minutes.
  • Once cooled, grab your blender and add the sliced peaches (only 5 of them), jalapeño simple syrup and a pinch of sea salt. Blend until smooth. Taste and adjust flavours if desired (ie. add more lime juice).
  • Grab your popsicle mould and add 2 thinly sliced peaches to each spot. Pour the peach mix into each spot to fill them up. Don’t forget to add the popsicle sticks! This mix will make 10-12 popsicles, depending on the type of mould you have and how big your peaches are.
  • Freeze for 4-6 hours or better yet overnight (if you can wait that long!).

Notes

  • Monk fruit sweetener is a white sugar replacement. There are different versions of it. Liquid, powdered and classic, which is like white sugar granules. In this recipe, I used the classic version.
