Good morning everyone!! After we whipped up this delicious recipe during our shoot day a couple of weeks ago, I have been so excited to share it with you ever since. To be honest, I didn’t know how it was going to turn out, and there were moments that I thought it was going to be a giant fail, but I’m happy to report it was a huge success and a recipe I will be whipping up for every get together for the foreseeable future. If the blog title didn’t give it away already, today I’m sharing all of the delicious details on Vegan BBQ Shredded Tofu Sliders With Grilled Pineapple Two Ways!

When we were planning out this recipe, we had originally intended to just add the shredded tofu to a pan to get it nice and crispy, but while we were at the farm making the recipe, our air fryer was in plain sight, so we decided to experiment! I wasn’t confident that the air fryer way would turn out, but it totally did, the only thing about the air fryer route was that some of the shredded tofu escaped through the grates, but it was a simple fix! So whether you have an air fryer or a pan, this recipe is an easy one to make and such a crowd-pleaser.

Vegan Shredded BBQ Tofu Sliders With Grilled Pineapple Two Ways!

Ingredients

  • Shredded Tofu BBQ Sliders
  • 1 package extra firm tofu

  • 1/2 tbsp garlic powder

  • 1/2 tbsp Herbamare (or seasoning salt)

  • 1/2 tbsp chili powder

  • 2 tbsp cornstarch

  • 1 tbsp oil

  • 6 oz bbq sauce

  • 1/2 onion thinly sliced

  • 1/2 pineapple

  • 1 package small brioche buns

  • Coleslaw
  • 1/4 a cabbage

  • 1/4 a red cabbage

  • 3 carrots

  • 1/2 cup vegan mayo

  • 1 tsp lemon juice

Directions

  • Shredded Tofu BBQ Sliders
  • Begin by removing the tofu from the packaging, drain the water, and press firmly between a few pieces of paper towel to remove any excess liquid. Then start grating the tofu.
  • Then add the shredded tofu to a bowl and add in garlic powder, Herbamare, chili powder, cornstarch. Mix tofu and spices together until even.
  • Add shredded tofu to either a pan or an air fryer. If you are adding to a pan, you’ll need to add 1 tbsp of oil; if you are using an air fryer, you won’t.
  • If you’re using a pan, turn your element to medium heat, and cook until crispy and brown.
  • If you’re using an air fryer, turn it to the hottest setting and cook for 20 mins, flipping in the middle.
  • Once the tofu is crispy, add bbq sauce to tofu mixture and coat evenly.
  • Cut pineapple into thinly sliced pieces; optional step is to grill them on the BBQ for a few minutes until you can see grill marks.
  • Coleslaw
  • Thinly chop cabbage and red cabbage, grate carrots and add to a bowl. Then add mayo, lemon juice to bowl and mix. Give it a taste test, and if you think it needs a little sweetness, you can add a tiny bit of sugar or honey. Or if you want to keep things simple you can always go with bagged coleslaw, totally up to you. Finally, add tofu, coleslaw, and pineapple to brioche buns and enjoy!
