Asparagus Fries With Vegan Lemon Garlic Aioli!


As many of you know, when we took possession of the farm last year, we were surprised to find wild asparagus growing all over the property! We love snacking on them raw (don’t knock it until you try it!), adding them as a side to our meals, and getting creative and making new asparagus-inspired recipes. A few weeks ago at one of our organic photoshoots, we whipped up some Vegan BBQ Shredded Tofu Sliders With Grilled Pineapple and these delicious Asparagus Fires With Vegan Lemon Garlic Aioli!

Today, I’m sharing all of the details on this delicious recipe!

Asparagus Fries with Vegan Lemon Garlic Aioli Jillian Harris

Asparagus Fries With Vegan Lemon Garlic Aioli!

Recipe by From the Kitchen of Jillian Harris

Ingredients

  • Asparagus Fries
  • 1 1 bunch of fresh asparagus

  • 1 cup 1 vegan mayo

  • 1 tbsp 1 water

  • 1 1/2 cups 1 1/2 panko

  • 1/2 tsp 1/2 Herbamare

  • 1/2 tsp 1/2 garlic salt

  • 1/4 cup 1/4 vegan parmesan (I used Earth Island)

  • Vegan Lemon Garlic Aioli
  • 1 cup 1 mayo

  • 1 tbsp 1 fresh lemon juice

  • 1 tbsp 1 fresh dill (or as much as your heart desires)

  • 1/2 tsp 1/2 minced garlic

  • salt

Directions

  • Asparagus Fries
  • Wash fresh asparagus and cut off the ends.
  • Then combine mayo and water to make vegan mixture. Coat asparagus fully in the mixture. Add panko crumbs, Herbamare, garlic salt and vegan parmesan to a shallow bowl and mix together. Cover asparagus in panko mixture.
  • Place asparagus fries in the air fryer and cook for 8 minutes on the highest setting (400 degrees) or until tender and crispy. Flip half way through.
  • Vegan Lemon Garlic Aioli
  • Add mayo, lemon juice, dill, garlic and salt to a bowl and combine. If you would like a thinner consistency you can add a tiny bit of water or more lemon juice.
  • Enjoy!
