Cornflake Chews: A Nostalgic Recipe From My Childhood


When I think back on the holidays growing up, there’s one dessert recipe that really stands out for me… and it’s my cousin Tori’s Cornflake Chews! Now, I’m not a huge cookie person, but if you’ve been following along for a while, you know that Tori’s holiday baking is legendary around here. If you have our cookbook, Fraiche Food Fuller Hearts, you would recognize this recipe! It’s been a classic in our family for decades, and has become a favourite for many of you which makes me SO happy.

These Cornflake Chews are chewy, unbelievably addictive and never last long on the dessert table at a party. The combination of toffee, crunchy cornflakes, toasted almonds, and coconut is pure magic.

These are one of those old-fashioned recipes that bring you back to your childhood. They’re easy enough to make with kids, and they fill the kitchen with the most delicious buttery, toffee scent. I like to make a double batch since they tend to vanish within a day or two (if that!)

Ingredients

  • 5 5 Mackintosh’s Toffee candy bars, roughly chopped

  • 3 tablespoons 3 heavy (35%) cream or coconut cream

  • 1/2 cup 1/2 sliced almonds

  • 1/2 cup 1/2 unsweetened ribbon coconut

  • 2 1/2 cups 2 1/2 Cornflakes cereal

Directions

  • In a large, heavy-bottomed pot, gently melt the toffee with the cream over low heat, stirring often until smooth (about 8 minutes).
  • While that’s melting, lightly toast your almonds in a dry frying pan until golden. Set aside in a bowl.
  • In the same pan, toast your coconut just until fragrant, it happens fast! Add it to the almonds and stir together.
  • Once the toffee mixture is melted, remove it from heat and fold in the almond, coconut, and cornflakes. Mix until everything is evenly coated.
  • Drop heaping spoonfuls of the warm mixture onto parchment paper. Lightly dampen your fingers and gently shape each one into a mound.
  • Let them cool completely before serving or storing.
  • Store at room temperature in an airtight container for up to a week, or freeze for up to a month (though honestly… they probably won’t last that long!).

Nut-Free Option

If you need to skip the almonds, just replace them with an extra ½ cup of coconut or cornflakes, still super delicious!
