Travelling for a month and not getting sick is a skill that I’m still trying to master. After all of these years of back to back cities I am FINALLY starting to realize the importance of the nutrients you put in to your body while on the go. As hard as it is when you’re busy, you still need to eat and think healthy. Once you figure out a plan that works for you, you will find it easier to jet set and go-go-go!
I have been starting my mornings off with smoothies that are packed with nutrients and have been snacking on these AMAZING energy bites throughout the day. They are so good, so healthy and quick and easy to make. They are perfect for when you’re busy and can keep you going throughout those long travel days. They are loaded with the Genuine Health fermented vegan proteins+ powder that I seriously swear by. If you haven’t tried it, I suggest you throw it in your smoothie tomorrow morning and reap the benefits!! Bye Bye seasonal colds …trying to kick mine in the butt!
Ingredients:
1 c. pitted Medjool dates (about 10)
½ c. boiling water
1 tsp. grated orange rind
¼ tsp. cinnamon
¼ c. old fashioned oats
¼ c. + ½ c. shredded or flaked sweetened coconut (divided, see instructions)
2 scoops Genuine Health Natural Vanilla Fermented Vegan Protein Powder
1/3 c. finely chopped toasted pecans
Directions:
1. Pour the boiling water over the dates and let them sit for 5 minutes to soften.
2. Reserve ½ cup of the shredded coconut and set aside in a shallow bowl.
3. Place all other ingredients except the pecans in a food processor and process until it is smooth and starts to stick together, about 2 minutes.
4. Stir in the pecans.
5. Roll a tablespoon of the mixture in your hands to make a ball, and roll in the shredded coconut to coat. Repeat with the remaining mixture.
