I’ve said before that everyone should have some secrets…. and this is DEFINITELY one of Justin’s!! Well, it was until right now at least haha! I have been holding back on leaking Justin’s SUPER AMAZING TOP SECRET recipe for over a year now, teasing my friends and family at multiple dinner parties of course. But today is the day people!! And since kale is currently sprouting in gardens all over, I think it’s just the perfect time.
I cannot stress enough how much of a tangy bouncy party this is in your mouth – you will DIE! Pair it with a thick-cut juicy steak and you have my and Justin’s absolute favourite Friday night meal – the flavours together are mind blowing!! It maybe, just maybe, was how Justin won me over in the first place 😉
Justin’s fantastic awesome kale Caesar salad!
TOP SECRET DRESSING INGREDIENTS.
Makes 2-3 servings
1/4 cup – olive oil
1 tbsp – white wine vinegar
2 tsp – dijon mustard
2 tsp – anchovy paste
1/2 tsp – Worcestershire
2 cloves garlic minced
Salt & Pepper
2 tbsp – grated parm
2 tbsp – Miracle Whip
1 full lemon squeezed
TOP SECRET OTHER INGREDIENTS.
Kale – this NEEDS to be on kale!
MORE Parmesan Cheese
For the dressing – mix and shake all liquid ingredients (including anchovy paste and garlic). Once all liquids are mixed add S&P, grated parm and mayo. I add the lemon juice and a tinch more vinegar at the very end so I can control the citrusy taste I want and extra added volume.
For the bacon – get the good UNCUT stuff and cut it into cubes and fry for quick juicy bacon bits.
For the croutons – take a loaf of uncut sourdough, rip it into tiny pieces (so much more rustic this way), toss in a bit of olive oil salt and pepper and bake until brown.
Serve it allllll together, top with a generous dose of Parmesan cheese, and you’ve got yourself YUM YUM MIND BLOWING YUUUUUMMMM!
