A couple of weeks ago, I was flipping to Chatelaine magazine & came across one of theirĀ salad recipes, which inspired me to create my own take on their spring salad!! Adjust the ingredients to your liking, and add or omit anything you’d like! The nice thing about salads is that they’re so versatile! I love the zesty combination of grapefruit, beets & goat cheese – party in my mouth!!
Ingredients
Pink Grapefruit
kale
Sprouts
Dill
Goat Cheese
heirloom tomatoes
red onion
cooked beets
sliced almonds!
Dresssing
1/4 cup of pink grapefruit juice
1/8 cup of champagne or wine vinegar
1/4 cup of olive oil
tablespoon of dijon mustard
tablespoon of honey
pinch of salt!
