Every weekend in the winter I crave the ultimate comfort food … grilled cheese. Last weekend though, I tried something a little different and put an Italian twist on it. The combination of juicy tomato, cheesy goodness and herbs in between two thick slices of Villaggio Toscana is like an explosion in your mouth. Yes, a classic grilled cheese always hits the spot … BUT once you try it this way, you may never go back!!
Ingredients:
Villaggio Toscana (2 slices per serving)
Butter
Goat Cheese or Boursin
Sliced Sharp Cheddar Cheese
Sliced Vine Ripened Tomato
1 tsp of dried basil
1 tsp of dried oregano
Directions:
1. Pre heat non-stick pan to medium. If using a smoking with charcoal pan, season it according to the manufacturer’s instructions, then lightly rub with canola oil before each use.
2. Butter Villaggio Toscana on BOTH sides. Spread goat cheese on one side, top with tomato & herbs, finish with 3 slices of sharp cheddar. Ensure tomato is in the centre to keep the Villaggio Toscana crispy.
3. Grill until golden, flip, grill until golden and serve!
