Overripe avocados used to make me want to cry. The window of opportunity for a perfect avocado is SO short – it’s like winning the lottery when you find a perfect one! This recipe makes the best of the bad situation that is sometimes unavoidable. This pudding is rich and decadent, vegan and full of healthy fat AND it whips up in one simple step. Not to mention it is PERFECT for your Halloween party this weekend or to pack in your kids lunches this week … a little something we like to call monster avo mashup in our house ….
Ingredients:
2 ripe avocados
1/2 cup cocoa powder
1 tsp. vanilla
1 tsp. instant espresso
¼ c. maple syrup
¼ c. hot water
pinch of sea salt
coconut whip topping
Directions:
1. Combine all of the ingredients together in a blender or a mini food processor and blend until smooth.
2. Serve it in very small pots and top with the coconut whip
