Hello everyone! My name is Peggy Exume, also known as VeggiePeggy, and I am so excited to be contributing to Jillian’s blog again! I received so much wonderful feedback about my Sticky Sesame Cauliflower, the last recipe I contributed, and it brought me so much joy.
I have another delicious recipe for you all that I hope you’ll enjoy. You can probably guess by my AKA “VeggiePeggy” that I am a lover of all things vegetables! Learning to implement a variety of vegetables into our daily meals is so important, yet can be a struggle for some. That is why I love making fun, easy, and delicious vegetable recipes to share with others. A diet rich in vegetables can reduce the risk of heart disease and stroke, lower blood pressure, lower risk of digestive issues, and they provide essential vitamins, minerals, and other nutrients, such as antioxidants and fibre. I will never not be in awe of the power of fruits and vegetables and the benefits they provide us! If you read my last contributing blog, you know my personal story of how switching to a plant-based diet has changed my life. This is why I am very passionate about helping others to add more plants to their meals.
Roasted Balsamic Brussel Sprouts
I just love brussel sprouts! They make a wonderful, delicious, no-fuss side-dish. When it comes to preparing meals and dishes, I am team KEEP IT SIMPLE; and that’s what this dish is all about. Oh, and of course it is all about the yumminess too! I’ve made my Balsamic Brussel Sprouts for serval picky family members and they always go for a second helping. I am happy to report that this recipe is:
- Easy to prepare
- Fresh and savory
- Easy to clean up
- Not many ingredients needed
- Healthy and nutritious
- Very quick and very delicious
Roasted Balsamic Brussels Sprouts is one of my absolute favorite ways to enjoy this versatile. Simply toss brussels sprouts in a little olive oil, diced garlic, salt and pepper and let the oven do the work– then drizzle and coat roasted brussel sprouts with balsamic vinegar and you’ve got yourself a delicious dish you’ll want to keep eating over and over.
