Sticky Sesame Cauliflower Recipe by Veggie Peggy


Recently, I was scrolling through Instagram looking to follow new influencers to brighten up my feed. In doing so, I stumbled upon the happiest feed I ever did see, Veggie Peggy! With just one glance at her feed, I instantly felt happy and ended up scrolling through her account for a while!

What I love about Peggy is that she is a mental health advocate, fitness enthusiast and vegan food blogger! I immediately had to reach out to see if she was interested in brightening your day with her energy and sharing a delicious vegan recipe!

If the photo didn’t give it away, Peggy is sharing her famous and delicious Sticky Sesame Cauliflower dish, perfect as we transitional into Fall!

Sticky Sesame Cauliflower Recipe

These sticky sesame cauliflower bites are a great way to add more vegetables and flavour to your diet while skipping the cholesterol and unnecessary processed fillers we find in so many products we might consume. You can make these bites as an appetizer, or make it a full meal with a side of rice, or double your veg intake by adding a side of steamed broccoli and mushrooms. Either way, I think you will enjoy these delicious bites!

Ingredients

  • Cauliflower Mixture
  • 1 head 1 head cauliflower

  • 3/4 cups 3/4 oat flour (or regular flour)

  • 1/2 cup 1/2 arrowroot (or corn starch)

  • 1/2 tsp 1/2 sea salt

  • 1/2 tsp 1/2 onion powder

  • 1 tsp 1 garlic powder

  • 3/4 cup 3/4 unsweetened non-dairy milk+ two teaspoons apple cider vinegar (mixed)

  • Sesame Sauce
  • 1 tbsp 1 toasted sesame oil

  • 1 tbsp 1 olive oil

  • 4 cloves garlic, minced

  • 1 tsp 1 fresh ginger grated

  • ¼ cup maple syrup

  • ⅓ cup low sodium soy sauce

  • 1 tbsp 1 rice vinegar

  • 1 tsp 1 chili garlic sauce (or sriracha)

  • 1/2 tbsp 1/2 arrowroot starch

  • 1 tbsp 1 cold water

Directions

  • Preheat the oven to 425F.
  • In a large bowl, whisk together the flour, arrowroot starch, garlic powder, onion powder, salt and non-dairy milk/ACV. Be sure to mix until no clumps remain and it looks like batter.
  • Add the cauliflower florets into the bowl and thoroughly mix to coat all of the pieces.
  • Transfer to a baking sheet lined with parchment paper and bake for 30 minutes.
  • To prepare the sauce: In a bowl, whisk in the sesame oil, grated ginger, maple syrup, soy sauce, rice vinegar and chili garlic sauce(or sriracha) —then set aside
  • Add minced garlic to a sauté pan with olive oil. Sauté for until lightly golden brown.
  • Add prepared sauce into pan and let simmer over low heat.
  • In a small bowl, whisk together the arrowroot powder and cold water. Pour into the pot with the sauce.
  • Let simmer over low heat until thick, whisking occasionally to prevent any clumps from forming. Once it thickens, remove from heat.
  • When the cauliflower is done, let cool for about 5 minutes and then coat with the sauce. Once coated add cauliflower back into baking sheet with lined parchment paper and put back in the oven for about 3 to 5 minutes to crisp up. Garnish with green onions, black/or white sesame seeds and ENJOY!
