About Peggy

My name is Peggy Exumé and I run a blog called VeggiePeggy, where I share healthy recipes, mental health tips, and fitness motivation on various social media platforms. It is a space where I promote nourishing the mind, body, and spirit; a topic I am passionate about because just six years ago, I struggled with depression, anxiety, and binge eating. It took some time for me to figure things out and become healthier, and my “Aha!” moment occurred when I finally understood that health is not just about “food and weight loss;” they are all interconnected. Yes, what I eat matters, exercise matters, but the thoughts I have about myself matter also, and making time for self-care and joy matters too!

It wasn’t a health journey of perfect choices, but one of slow progress and holding myself accountable in making better choices for optimal living. So, as I continue to live a lifestyle of making healthier choices, I have developed a passion for encouraging others to do the same. From food to fitness, I love to share tips and inspiration for wellness and better living. And that’s where this Sticky Sesame Cauliflower recipe comes in!

Sticky Sesame Cauliflower Recipe

These sticky sesame cauliflower bites are a great way to add more vegetables and flavour to your diet while skipping the cholesterol and unnecessary processed fillers we find in so many products we might consume. You can make these bites as an appetizer, or make it a full meal with a side of rice, or double your veg intake by adding a side of steamed broccoli and mushrooms. Either way, I think you will enjoy these delicious bites!

  • 1 tbsp cold water

Directions

  • In a large bowl, whisk together the flour, arrowroot starch, garlic powder, onion powder, salt and non-dairy milk/ACV. Be sure to mix until no clumps remain and it looks like batter.

  • Transfer to a baking sheet lined with parchment paper and bake for 30 minutes.
  • To prepare the sauce: In a bowl, whisk in the sesame oil, grated ginger, maple syrup, soy sauce, rice vinegar and chili garlic sauce(or sriracha) —then set aside
  • Add minced garlic to a sauté pan with olive oil. Sauté for until lightly golden brown.
  • Add prepared sauce into pan and let simmer over low heat.
  • In a small bowl, whisk together the arrowroot powder and cold water. Pour into the pot with the sauce.
  • Let simmer over low heat until thick, whisking occasionally to prevent any clumps from forming. Once it thickens, remove from heat.
  • When the cauliflower is done, let cool for about 5 minutes and then coat with the sauce. Once coated add cauliflower back into baking sheet with lined parchment paper and put back in the oven for about 3 to 5 minutes to crisp up. Garnish with green onions, black/or white sesame seeds and ENJOY!
