Good morning loves!! I hope everyone had an amazing holiday filled with loved ones, laughter, and lots of good food and wine, of course!🍷It was so nice to be able to have some time to really enjoy family and friends company and relax a little bit!
But it’s that time again when we have to kick things into gear and get back in the swing of things! This can be really tough after the holidays, I know some mamas out there have to agree with me! With that being said one of the hardest parts about stepping back into reality is getting back to dinner prep, and figuring out what to make every night! But I’m going to share some super easy and delicious soups that are seriously a lifesaver in the kitchen and allows for lots of leftovers too! Which is a huge bonus, am I right? What is better than a nice bowl of warm soup with the snowy weather anyway? I’ll share some of my all-time faves below!
1. Tuscan Tomato Basil Soup with Garlic Parmesan Croutons
My mouth is watering just looking at this you guys!! Who doesn’t love a bowl of classic tomato soup, and this isn’t any ordinary tomato soup, it is packed full with delicious flavours and the basil brings it to perfection! I could seriously snack on the garlic parmesan croutons all day long! They add the perfect finish to this Tuscan Tomato Basil Soup!
2. Vegan Mexican Roasted Red Pepper Soup
Okay, this one is for all my Mexican food lovers out there, and even if your not this is a MUST-try! We know that Mexican food isn’t the healthiest option (SIGH) so we made sure that this Mexican Roasted Red Pepper Soup gives you all the same flavours yet is hearty and full of goodness for the soul! I promise you it doesn’t disappoint!
3. Veggie Scrap Broth
This Veggie Scrap Broth is the perfect option if you have any leftover veggies in the fridge that you need to use up from over the holidays! It is also great to whip up if you’re fighting a cold and feeling under the weather! It couldn’t be easier to make either, I mean that is one of the main reasons why I love it! LOL!
4. Gut Healing Veggie Broth
This Gut Healing Veggie Broth the perfect way to kick start your new year and start fresh after all the yummy treats and food over the holidays! It is both flavourful and comforting, and will get your gut back on the right track and leave you feeling good!
5. French Onion Soup
There are two words to describe this French Onion Soup from my cousin Tori and that is pure COMFORT FOOD!! This has to be one of my faves and go to’s for soups when the weather is chilly outside!
6. Hearty Lentil Soup
This Hearty Lentil Soup is another of Tori’s recipes and let me be the one to tell you it’s dang delicious! It is full of hearty and healthy foods too! If you’re trying to sneak some healthy foods into your family’s dinner without them knowing this is the way to do it, they will never know! LOL! We almost never have leftovers of this when I make it because it gets eaten up so fast!
