Okay, I know that’s a bold statement… but trust me on this one. If you’re looking for the salad of the summer, this Mediterranean-inspired one is IT. I’ve been making this on repeat! It’s tangy, herby, crunchy, fresh, and DELICIOUS. It’s one of those salads that is both light and refreshing, but also filling and satisfying.

Ingredients

  • Finely diced kale

  • Cucumber

  • Fresh dill, mint, and basil

  • Chickpeas

  • Mini tomatoes

  • Kalamata olives 

  • Red onion

  • Crumbled feta

  • Tangy Mediterranean Dressing
  • 1/2 cup 1/2 Olive oil

  • 2 tbsp 2 Red wine vinegar

  • 1 tbsp 1 Dijon mustard

  • 1 tbsp 1 Maple syrup

  • 1 1 Lemon squeezed

  • 1 pinch 1 Dried oregano

  • 1 clove 1 Garlic

  • Salt and pepper to taste

Directions

  • Finely chop up all your veggies and add to a large bowl.
  • Combine all the dressing ingredients in a jar and mix well.
  • Add your dressing to the salad.
  • Make it a meal! You can totally enjoy this on its own (I often do!) but if you’re looking to bulk it up a little, it’s so yummy with a piece of fresh grilled fish, like salmon, or even some crispy tofu if you’re keeping it plant-based.
