With Cinco de Mayo just around the corner, I thought I would repost this fresh, Mexican inspired salsa recipe! This salsa is not only super easy to make, but it tastes AMAZING, and is so much healthier than store-bought salsas.

Once you make your own salsa you’ll NEVER buy it again, I promise. This is perfect paired with classic Mexican fare, but can also be used to dress up a plain grilled chicken breast or nice piece of fish for an impressive dinner in a pinch! YUMMY!
Ingredients
3 1/2 c. of finely diced tomatoes (I use the seeds)
2 finely diced jalapenos with most of the seeds removed
1/2 of a red onion, finely diced (about 1/2 cup)
3 garlic cloves, crushed
3 tbsp. of olive oil
1 c. fresh cilantro, roughly chopped
juice of 1 lime
salt to taste
Directions
Mix all ingredients together in a bowl one hour before serving. Take care to wash your hands well after dicing the jalapenos or your eyes wont be happy!!
