It’s time to enjoy summer produce while we still can so this week I’m featuring a yummy watermelon recipe from my BFF Carol Kelley. This is great for warm nights on the patio with girlfriends (and of course some wine).
Salad Ingredients
1 mini watermelon, diced or melon balled (if the mini watermelons aren’t available then half of one big melon)
å_ half sweet onion, cut into thin rings
3 handfuls of arugula
1 bundle of mint, chopped
1 cup of feta cheese
Dressing
å_ fresh lemon, squeezed
1 dash of salt
1 tsp of Dijon mustard
å_ cup red wine vinegar
A little less than 1/4 cup olive oil
