Food Friday: Papaya and Avocado Salad


Papaya Avo Salad

So now that you’ve read over Patricia’s super easy 80/20 rule… today’s Food Friday is going to be a fresh summer salad that you can serve up to your friends and fam on a hot day!!  We have to get in some of this healthy food this week because for next week’s Food Friday is going to be for Dad’s Day!  Until then, check out this dressing… something tasty & different!  Have a great weekend! Papaya and Avacado Salad

Dressing

2 Tbsp granulated sugar
½ tsp dry mustard
1 tsp salt
2 Tbsp papaya seeds (scooped from the fresh papaya)
¼ cup white wine vinegar
¼ cup canola or vegetable oil

Blend all dressing ingredients together in blender or food processor until papaya seeds look like ground pepper. Set aside.

Salad

1 large head romaine lettuce
¼ red onion, sliced thinly
1 medium papaya, peeled and cubes
1 avocado, halved and sliced thinly
1 green onions, chopped

Wash and tear lettuce leaves and place in large salad bowl. Toss with red onion, papaya, avocado and green onions. Drizzle with dressing to serve.
