If you’ve never tried zucchini pizza before, let me just tell you that you are TOTALLY missing out. It’s fresh, light, savoury, healthy, delicious… and – best of all – soooooo easy. I like to keep it really simple with a margarita-style, but you can basically rummage through your fridge and cupboard and get creative with all sorts of toppings. I can’t tell you how many times Justin and I have whipped these up for a midnight snack in the past few months.. pair with a glass of your fave Sauvignon Blanc and you’ve got yourself some magic. Yum yum yum!!
Makes 4 “pizzas”, or 2 servings
Ingredients:
2 large zucchinis, sliced the long way in half
Olive oil
2 tomatoes, sliced
1 cup mixed mozzarella & romano cheese
Dried Italian seasoning
1/2 cup fresh basil, chopped
Salt & pepper
Directions:
1. Slice zucchinis in half (the long way) and brush with olive oil.
2. Top with tomato slices, cheese, and Italian seasoning.
3. Bake in the oven at 400 F until golden brown (about 20-25 mins).
4. Remove and top with fresh basil and salt & pepper. YUM!!!
