There’s a top #breadie competition going on in Vancouver right now between two local chefs. Their different recipes inspired me to create something unique, healthy and delicious of my own using Justin’s favourite, Arnold Bread (a new premium lineup on the west coast … total must try!!!). Who said grilled cheese has to be unhealthy?!? This greens infused super sandwich is savoury, cheesy & PACKED full of zesty greens!! You don’t need to sacrifice nutrition for taste with this green goddess of a sandwich …
Ingredients:
Arnold Bread – When It Grains It Pours
Okanagan Carmelis Goat Cheese
Happy Days Organic Mild White Cheddar
Fresh spinach
Fresh basil
Zucchini (thinly sliced)
Avocado (sliced)
Sprouts
Margarine or butter
Zesty Pesto
(blend below ingredients in a bullet or blender)
Large handful of parsley
1/4 of a lemon squeezed
1 garlic clove
salt and pepper
1/4 cup of olive oil
Directions:
1. Layer all ingredients on buttered bread (both sides)
2. Grill until golden brown and crispy … and then serve!

Where was it mentioned in the actual post that this recipe was vegan? I read grilled cheese, healthy, delicious, nutrition, tasty, Arnold’s bread…No matter, it looks tasty and healthy, mission of the post accomplished! Vegans will know to substitute the goat cheese. Let’s stop hatin’!

This kind of negativity and hostility is the reason why she was so hesitant to come out and speak about her journey to become vegan. She also recently announced how now that she is pregnant she has altered her diet to do what is best for her and her baby. No one is perfect. If you don’t approve or like her blog and posts don’t follow.

Sorry I thought I wrote this already but can you recommend substitutions for goat cheese since us pregnant ladies are not allowed to have it !
There are tons of different nut cheeses you can make and great vegan alternatives at the grocery store!
Just made this for lunch and it was amazing! I subbed mozzarella for the white cheddar and used guac (I was out of avocados) and dried basil instead. Still 10/10, thanks so much for the recipe! 🙂
