One of the tastiest and easiest recipes to whip up for lunch, dinner, appies or snacks … tuna melts!!! I decided to add some spice and kick to these ones and make them more “adult” than your typical tuna melt. What do you think of when you think of tuna melts? For me it brings me right back to cozy lunches inside with my family. Just like being a kid again!!! I whipped these up last weekend and they definitely were a crowd pleaser.
Ingredients:
1 can tuna, drained
1 Anaheim pepper, finely diced
2 Tbsp. mayo
1 tomato, thinly sliced
4 slices whole grain bread, toasted
4-8 slices old cheddar cheese (enough to cover 4 melts)
1/4 cup thinly sliced red onion
Directions:
1. Preheat oven to broil
2. Mix together the tuna, pepper and mayo. Season with salt and pepper to taste.
3. Line a baking sheet with parchment paper and lay the 4 slices of toasted bread on the sheet.
3. Divide the tuna among the 4 slices of bread and spread evenly. Top with the tomato slices, cheddar cheese and sprinkle with the red onion.
4. Broil till golden and the cheese has melted and serve with extra banana peppers.
Try them this weekend and trust me … you won’t be disappointed.
