Back in February of 2020, when Justin, the kids, and I got back from Hawaii (the last time we have traveled outside of Canada 😭) not only were we greeted by Nacho and Peaches with slobbery kisses but we came home to a spotless house and a meal waiting for us! Rachelle (our photographer) was house-sitting while we were away and right before we got home she made a batch of my cousin Tori’s Breakfast Taquitos. They were so delicious and such an easy meal to make during quarantine … side note, you’ll want to make extra … keep reading to find out why!!

There is nothing like travelling all day and having to prepare a meal for hangry kids (and adults 🤪) as soon as you get home. As soon as Tori had posted her Breakfast Taquitos recipe I knew it would be the perfect meal to prepare for Jill and Justin before they got home. I made sure to prepare extra just in case they loved them as much as I did. After I finished prepping the Taquitos, I packed them up and put them in the freezer for an easy on the go meal or snack.
Since then, this recipe has been one of my faves, they are not only super easy to prepare, but you can stuff them with any ingredients you want or anything that you have in the fridge! They are perfect for breakfast (or any meal for that matter!) and are relatively guilt-free! After making them for myself and the Pasutto’s we wanted to put together a quick little video to show you just how easy these are to make!
