So this one comes courtesy of my girlfriend and roommate Carol. She floors me how well she eats and exercises during the week – it’s great because it inspires me!
The problem is, I LOVE comfort foods… so for me, it’s hard not to dive into the pasta or cheese. That is why I am currently OBSESSED with this “great for summer bikini bod & comfort food cravings” dish. Seriously, I have been living off of it lately!
Super easy and more than super healthy! Here we go:
1 head of cauliflower
1/4 cup of Greek yogurt
1 garlic clove
Diced chives (to taste)
Salt & pepper
See the ingredients? I mean really… HOW HEALTHY is this?! I swear, even if you don’t like cauliflower your will love this!
Literally just steam the heads, mash them and add the other ingredients.
If you want a bit of cheese love you can add 3 tablespoons of grated parm! And think of the variations for this one… endless! 🙂
