Happy Friday, everyone!! I’ve been rushing around trying to get ready for my big trip to Europe – I leave tonight, eeek! – and so I haven’t really had the time to cook an elaborate meal. So, last night, between loads of laundry, tying up loose ends at work, countless calls back and forth to my mama, and – of course – outfit contemplation, I threw these super-duper no-fuss easy-peasy heirloom potatoes in the oven so that I didn’t end up eating KD at midnight (it happens from time to time….)
These have been a staple go-to for me for years because they’re PERFECT with everything from steak to salmon to chicken. And If you have any leftovers, they make FANTASTIC hashbrown the next day! I paired mine last night with grilled salmon & a glass of vino to calm by hectic little mind. Perfection!

Recipe:
In a large bowl, toss heirloom potatoes with olive oil (enough to coat), salt & pepper, squeezed lemon juice, and fresh dill. Toss in a few lemon rounds as well for those who love a little extra flavour!
Roast in the oven at 425 degrees for about 35 minutes, or until crispy on outside & tender on the inside. That’s it folks!
