Frozen, Healthy & Delicious


I figured with all of this hype about banana ice cream that I would give it a whirl (pardon the pun). I mean, how good could it be…it’s bananas, right?  Was I EVER wrong!!! Now, snacks don’t feel quite right to me without some source of protein (helps you feel full and build muscle), and since I love frozen yogurt I thought I would try a Pina Colada frozen yogurt version of banana ice cream. Three ingredients and one blender later and I was in heaven! This will absolutely become a summer staple, and is so flavourful, easy and healthy, I can’t stop eating it! You can use non-fat greek yogurt, but I like a little bit of richness in my dairy products and am not afraid to use the slightly higher fat versions when duty calls.

Pina Colada Banana Frozen Yogurt:

1 frozen banana, broken into chunks
1 1/4 cups frozen pineapple chunks, fresh or canned
1 cup coconut greek yogurt (use at least 2% fat, I used the Krema brand)

Place all ingredients into a really good blender (I use a Vitamix and highly recommend the investments) or a food processor and mix until smooth. Pour into a dish or pan (I used a loaf pan) and freeze for approximately 1 hour, until frozen but still soft.

Try not to eat it all in one sitting! I double dare you!!!

  1. I just made this tonight and it’s delicious! I’m not usually a big fan of pineapple but it tastes great with this recipe, so this is a perfect way for me to add more fruits to my routine. 🙂
