Ice cream is my ALL-TIME favourite treat, but the traditional versions are what we would call a ‘sometimes food’ in our house.
It is SO easy to make your own healthy creations, which we do at least once a week (regardless of the season!). The only tools you need are a great blender like the Vitamix (a kitchen MUST HAVE) and whatever popsicle forms you like (I LOVE these traditional ones from Williams Sonoma).
Neapolitan ice cream is one of my top picks when it comes to ice cream, so I made some tweaks and created this version that is filled with Greek Yogurt and fruit – YUM! Talk about guilt-free!
Strawberry Layer:
- 1 cup fresh or frozen strawberries, cut up
- 1/2 cup vanilla Greek yogurt
- 1 cup 2% milk
- 2 Tbsp. honey
Vanilla Banana Layer:
- 1 ripe banana, broken into chunks
- 1/2 cup vanilla Greek yogurt
- 1 cup 2% milk
- 1/2 tsp. vanilla
- 1 Tbsp. honey
Chocolate Layer:
- 1 cup chocolate pudding or full-fat chocolate milk
Instructions:
Starting with the strawberry layer, fill each popsicle form to 1/3 full, insert your popsicle sticks, and freeze. Once frozen, add your vanilla banana layer, filling to 2/3 full, and freeze. Finally, add your chocolate layer to fill the forms and freeze completely. Run the forms under warm water to loosen the popsicles and enjoy!!!
