This recipe can’t be any simpler … it’s exactly like a typical BLT but you just replace the mayo with vegan mayo, I used Hellman’s Vegan Dressing on this one and subbed the bacon for vegan bacon!! I used vegan bacon from The Very Good Butchers and it was soooooo good!!! I also like to serve up my BLT with a pickle and/or olives on the side and of course, some chips!!! Hey, I never said this was a healthy meal … I just said it was vegan!! LOL!!!! Ps. If I had to name one sandwich I miss the most it would have to be a BLT. Bacon … lettuce and tomato. This used to be one of my favourite lunchtime staples and ever since I made the transition to a more plant-based diet I’ve struggled to create the perfect vegan BLT. Well … guess what, ladies and gents?! I FRICKIN MADE IT!!! I actually whipped this up a few years ago during one of our massive photoshoots at the house, I got the girls to taste test and it’s still one of our all-time favourites!! So, today I wanted to share it with you so you could recreate it and give it a try for yourself!! I find that in order to make a kick-ass BLT you just HAVE to use white bread … I’m not against using brown or rye bread, I just think that white bread tastes best because it seems more indulgent! photo creditEnjoy!! xo Jilly
