As sad as it is to see summer go, I am so excited for fall!! I don’t know about you, but I LOVE sweater weather and all things cozy! So, I thought it was time to share my favourite cozy fall recipes with you to enjoy! If you’re following me on Instagram, you probably already know that I’m starting to decorate for fall and this year I decided to spice it up with some colour! Can you believe it?! I’m already drooling over here with these fall inspired recipes!! I might just have to jump right in with a drink…it’s 5 o’clock somewhere, right?!
1. Apple Ginger Bourbon Smash
This festive cocktail is PERFECT as a welcome drink not only for Thanksgiving but for fall dinner parties! I love the combination of apple cider and ginger beer!!
2. Scrumptious Pumpkin Spice Steamer
This recipe is to die for!! It’s from my cousin, Tori from Fraîche Nutrition! When I think of being cozy in fall this is exactly what comes to mind, sipping on a mug of warm pumpkin pie! Does it get better than this?! Okay … maybe with a shot of rum!! LOL
3. Spiced Apple Cinnamon Waffles
If you’re looking for something delicious to pair with your Pumpkin Spice Steamer, then you have to try these Spiced Apple Cinnamon Waffles! This has to be the definition of a cozy fall morning!! 4. Lazy Vegan Beet Rolls
I’m sure by now you know how much I love my Ukrainian food, especially beet rolls!! But instead of them being packed with butter and cream, try Tori’s quick vegan version, here!
5. Vegan Mushroom Wellington
Now this recipe is the comfort food of ALL comfort food! Plus, it’s vegan! Tori and I teamed up to make this delicious recipe for you!! Instead of the traditional beef, we re-created this savoury dish with mushrooms and used Becel Vegan in replace of butter to help cut down on those saturated fats!
Pro Tip: This recipe is delish any day but it tastes best devoured on a gloomy day when you can cozy up inside and sip on a nice big glass of red wine!
6. Mushroom & Kale Gnocchi
Pssstttt … this recipe is SO INDULGENT but the best part is, you can use packaged gnocchi to cut down on time or use fresh garden potatoes and make homemade gnocchi!
7. Potato Rosemary Focaccia
Now, this is a show-stopper!! Perfect for fall with fresh garden potatoes. Tori from Fraîche Nutrition recipe for this rustic focaccia that will make you look like a HERO in the kitchen! This focaccia takes a bit of time to make but it is WELL worth the effort and truly not difficult!
8. Classic Vegan Poutine
I don’t know about you … but I LOVE a good poutine, especially in the fall! I don’t think there’s anything more satisfying than devouring a delicious poutine!! I mean, what’s better than loading your fork up with the perfect mix of crispy fries, stringy cheese, and salty gravy?! 9. Vegan Butternut Squash Mac ‘N Cheese
I’m starting to drool at the thought of this and my stomach is starting to growl! LOL! Speaking of comfort food … my vegan butternut squash mac n’ cheese is SO delicious! Especially in the fall, with butternut squash in season!
10. Butternut Squash Sage Lasagne Roll-Ups
Tori has done it again with another fall-inspired recipe! This is the perfect dish for those chilly evenings when all you want to do is curl up on the couch and indulge in some delicious comfort food and a big glass of wine!
11. Vegan Pumpkin Cheesecake Jars
I. Can’t. Stress. This. Enough. This recipe is AMAZING!! Not only is it vegan and sooo tasty but it’s also SO EASY to prepare and super cute in individual jars!!
